When Deathwing roasted Azeroth, he left fiery destruction in his wake. The volcanoes, tidal waves and rents in the crust changed the ecology of many zones, allowing different plants to flourish and others to die out of certain areas.
I have now updated my Herbalism charts, showing the post-Shattering zones where herbs can now be found. The current version was created using herb spawn count stats from Wowhead at the start of February 2011. I'll be updating it from time to time as the stats change.
So what changed?
Many zones changed their level with the Shattering (patch 4.0.3), so the herbs to be found there also changed. There seems to be a lot more spawn points in general which is nice - it should be easier to keep up your herbalism leveling as you move from zone to zone as well. Incidentally, a few of the herbs had their level requirements lowered. I've put an asterisk next to their levels.
The other new feature that makes leveling herbalism along with your own leveling attractive is that picking flowers now gives you experience. It starts at just a few xp for the basic level herbs, and scales up to over ten thousand for the highest ones - this xp is most beneficial at the lowest level you can get at it, so it's now really worth trying to keep your herbalism up to being able to pick the herbs in the zone that you are currently in.
Two herbs are no longer to be found anywhere in the world - Plaguebloom and Wintersbite. Arthas' Tears are now only to be found in Razorfen Downs.
Instead, we have two new identified species - Dragon's Teeth and Sorrowmoss. We can also now harvest the new Cataclysmic herbs - Azshara's Veil, Cinderbloom, Stormvine, Heartblossom, Whiptail and Twilight Jasmine. It's early days for the spawn point counts for these herbs, so please take them with a pinch of salt.

How should I use the chart?
Look at the herbs that you are able to pick at your current level of herbalism. Where do those herbs spawn the most?
For example, Angelya's herbalism is currently at 184. At this level, herbs like Bruiseweed, Kingsblood and Wild Steelbloom are still green. I am picking and still expecting to level from Liferoot, Fadeleaf and Goldthorn and lately have started being able to pick Khadgar's Whisker.
This range of herbalism levels seems very easy to level - most zones that I would be expecting to quest in are likely to have the herbs I need to level herbalism. Angelya is currently questing in Thousand Needles which isn't the best for herbs, but I'll need to make sure my herbalism is up to at least 205 before I move onto zones such as Tanaris or Felwood where there are no herbs lower than Firebloom.

Don't forget, there is plenty of Dreamfoil and Golden Sansam in Hellfire Peninsula, so you don't have to have 300 herbalism before going to Outlands. However, you do need 350 herbalism before moving on to Northrend - there are no Kalimdor/Eastern Kingdoms herbs in the frozen north.
There is one last thing that I can't help you with, and that's that you must remember to train the next level of Herbalism before levels 75, 150, 225, 300 and 350!
